GREEN GODDESS LIGHT

Welcome to episode two of “Dressing Makeover”,  in this series I share how to lighten up classic salad dressings so that they’re not calorically equivalent to a cheeseburger. Don’t get me wrong I LOVE a good cheeseburger, but when I’m craving a cheeseburger, I’d rather just eat a cheeseburger.

Today we are tackling Green Goddess dressing which is classically made with mayo and sour cream. By simply swapping those ingredients with low-fat Greek yogurt and 2% milk, protein goes from approximately 3 grams to 23 grams and the calories are cut by almost 50% without compromising flavor. I also swapped raw garlic with garlic powder because raw garlic hurts my tummy and I think lots of folks can relate.

Feel free to swap out the fresh herbs based on your preference. I happen to love tarragon, but I know it can be hard to find.

GREEN GODDESS LIGHT

Ingredients

½ cup basil

½ cup parsley

¼ cup green onion

2 tbsp tarragon, dill or cilantro

2 tbsp olive oil

½ tsp salt

¼ tsp pepper

½ tsp garlic powder

2 tbsp lemon juice

8 ounce 2% Greek yogurt

¼ cup 2% milk  (regular or unsweetened oat)

¼ cup chives finely chopped

 

Instructions

-Add all ingredients, except for the chives to a blender. Blend until smooth.

-Mix in chives and pour over your favorite leafy greens, chicken, shrimp or salmon!

Note: Be sure to store this dressing in the refrigerator. It should keep for about a week.
