Put An Egg On It- Easy Avocado Toast Recipe

The only thing better than avocado toast is avocado toast with a perfectly cooked soft boiled runny egg right on top. This easy avocado toast recipe is both healthy and satisfying. The microgreens and avocado are nutrient dense. The egg has both iron and protein and the sprouted whole grain toast keeps you feeling full.
INGREDIENTS:
(Recipe Serves 2-4)
- 4 eggs
- 4 slices of bread toasted
- 1 large avocado
- 1/4 tsp of coarse sea salt
- 1/8 tsp smoked paprika
- 1 cup of micro greens or arugula (divided into four)
HOW TO MAKE THE PERFECT EGG: Soft boiling an egg to your liking can be trickier than you’d expect. Follow the recipe below for the perfect soft boiled egg, no matter what your preference.
Fill a medium sized pot with enough water so that the 4 eggs can be fully submerged. Bring water to a boil. Once the water is boiling, use a slotted spoon to gently lower the eggs into the boiling water.
For a 6 minute egg (see below) allow the egg to boil for 6 minutes then, using your slotted spoon, immediately remove the eggs from the boiling water and place them in a bowl of ice water. Peel just before eating.
For a 7 minute egg (see below) allow the egg to boil for 7 minutes then immediately remove the eggs from the boiling water and place them in a bowl of ice water. Peel just before eating.
TIPS FOR PEELING SOFT BOILED EGS
Tap the base (the fatter bottom) of the egg gently until it cracks. Begin to peel the egg. This is where you will usually find the eggs air pocket and should be able to get under the thin egg membrane. Continue peeling from under the egg’s membrane. If you peel from under this membrane your eggshell will come off clean. Practice makes perfect.
PUTTING IT ALL TOGETHER
Peel and de-seed the avocado. In a bowl gently mash together the avocado, salt, and smoked paprika. Divide the avocado mash into 4 even portions and spread it onto each piece of toast. Top each piece of toast with micro greens. Place the egg on top of the microgreen. Cut into egg just before eating and devour!
